My attempt at mint jelly is more like mint syrup. Eh, all the better for mixing into drinks like mojitos or mugs of tea, right?
Mint Jelly
4 cups water
2 cups packed mint leaves
1 package powdered pectin
5 cups sugar
Combine
water and mint in large saucepan. Bring to a boil, remove from heat,
cover and let stand 10 minutes. Strain out mint leaves, reserving
water. Combine 2 2/3 cups of water with the pectin. Return to a rolling
boil, and add sugar. Bring to a rolling boil for one minute, stirring
constantly.
Remove from heat. Skim foam. Pack jelly into hot sterilized jars leaving 1/4-inch headspace. Boil in a hot water bath 15 minutes.
